Creative team brings new-style hand roll sushi kiosk to Soho
The take-away site will launch on Great Windmill Street on 11 October.
Founded by Australian entrepreneur Jeremy Bliss and Charlie Hall from hospitality site Code London, Inigo’s USP will be the burrito-style in which the sushi will be served.
The rolls will be left whole instead of being sliced in the traditional way, and there will be six varieties on offer, with rotating specials.
Fillings will comprise ponzu-marinated tuna with baby gem lettuce, spicy mayo and crushed wasabi peas; miso-cured salmon with avocado, macadamia nuts and pickled daikon; and miso broccoli with cucumber, pickled daikon, and chives. There will be inventive twists on Japanese flavours, such as crushed wasabi peas and blowtorched nori. Prices will start from £4.
Sides will include salads and soups, and a selection of both soft and alcoholic drinks will be on offer.
The founders are making a conscious effort to reduce waste, so no plastic wrapping will be used. The hand-held sushi rolls will instead be wrapped in compostable packaging.
Interiors by Carlos Sanchez and Tom Benton, formerly of 6a architechts, will use warm colours and modern touches, with a Japanese aesthetic. The rolls will be made on a marble and steel deco inspired counter.
“We are very thrilled to announce the opening of Inigo next month” Luke Pritchard wrote on Instagram, adding that it had been a “long time coming”.
The concept has input from a team of experts, who have collaborated on the design and music for the site, comprising design director Daniel Huggett (Universal, Sonos, Sony); uniform designer Leonard Bachman (McQueen, Tom Ford, Chloe); and music curation from Luke Pritchard, lead singer of The Kooks, who is also an investor in the business.
