The former executive sushi chef for the Zuma group of restaurants will open eponymous restaurant Endo Kazutoshi on Beak Street on the former Grillshack site, with the restaurant slated for a November launch.
The sushi restaurant will draw on the Yokohama-born chef’s more than two decades of experience in restaurants including El Bulli in Spain. The third-generation sushi master also oversaw the sushi offer at Zuma’s restaurants in London, New York, Miami, Dubai, Hong Kong and Istanbul.
Last year he prepared a one-off dinner at Kisetsu, the private dining space within Jason Atherton’s Japanese izakaya restaurant Sosharu in Clerkenwell.
Kazutoshi has also been involved with Ichibuns, the Japanese ramen and burger restaurant that opened this month in London’s Chinatown.
No details have been released on the menu, but the restaurant website states the following philosophy: ‘It is harmony, precision and tranquillity. It is also perception, behaviour an imagination which shape people’s values. Over centuries, these values have been inherited and applied in our culture and in our customs. We bring our essence of sushi in the way we entertain our guests.’
High-end sushi restaurants are currently enjoying success in the capital. The Araki, in Mayfair, holds two Michelin stars and last month Clerkenwell-based Sushi Tetsu took the top spot in All In London’s annual Ultimate Restaurant List.
