The Seren Collection welcomes Tom Hine as new Coast head chef

Tom Hine has been appointed new head chef at Saundersfoot’s Coast restaurant, by owner The Seren Collection. He will take the reins mid-Autumn, on 5 October.

Hine is replacing head chef Will Holland, who opened the Michelin-recommended restaurant three years ago with owners Neil and Zoe Kedward. During his time at Coast, the restaurant was awarded two AA rosettes and named AA Restaurant of the Year in Wales 2015-16.

The newly appointed Hine comes from a family of fishermen, and started his career as a KP at Rick Stein’s Seafood restaurant in his home town of Padstow. Since then, he has worked at Number 6, also in Padstow, The Bath Priory, Gidleigh Park and, most recently, as executive head chef at Devon’s Lympstone Manor alongside his mentor Michael Caines.

“Coming from Cornwall, this opportunity is a great place to begin a new chapter for myself by the sea,” says Hine.

“I feel excited to have been offered this outstanding role and am looking forward to working with Neil and Zoe to deliver an exciting seafood restaurant for Pembrokeshire.”

The arrival of the new chef comes as The Seren Collection plans further investment for the restaurant, which will allow Hine to reinvent its offer and take ownership of its direction.

Coast is located on Coppet Hall Beach  in Wales, overlooking Carmarthen Bay within the Pembrokeshire Coastal National Park. 

Holland, who will be competing in the National Chef of the Year 2018 final in October at The Restaurant Show, has been appointed executive chef at the Atlantic Hotel in Jersey. He will begin his tenure there in the same month.
