The Pilgrm hotel announces restaurant details
Jason Catifeoglou says the project will be a ‘reinterpretation’ of the traditional hotel when it opens in Paddington this Autumn.
The Pilgrm will feature a Victorian-inspired coffee house and 30-cover Lounge restaurant with an open kitchen.
The eclectic menu will include a British charcuterie selection from Borough Market’s Cannon & Cannon; ramen noodles with crispy pork belly and toasted seaweed; and cauliflower falafel with harissa labneh.
There will also be a departure from the traditional hotel breakfast, with early morning dishes ranging from kimchi rice with tea poached egg; to sweet potato ‘toast’ with guacamole.
Instead of using minibars or room service, guests at the 73-room hotel will be encouraged to meet each other through ‘Pantries’ available on each floor, filled with hot drinks and snacks.
“The Pilgrm's neighbourhood café and lounge will express a sense of adventure through both our ingredients and influences,” says Catifeoglou.
“Balancing the familiar with the novel, this autumn we’ll bring some of our favourite dishes and cocktails to Norfolk Square.”
The Pilgrm is a joint project from Catifeoglou, myhotels founder Andreas Thrasyvoulou and Steph Thrasyvoulou.
Catifeoglou formerly worked as general manager at The Zetter Hotel & Townhouse before progressing to a board member of the company.
The Zetter Group announced on Friday it will be closing its Grain Store restaurant due to the upcoming departure of chef Bruno Loubet.
