It comes nearly two years after chef Andrew Turner left the post in August 2015. The position has remained vacant since his departure, with sous chef and 2007 Roux Scholar Armand Sablon holding down the fort until now.
In the interim period the hotel has hosted a 10 week residency from Spanish chef Albert Adria and a four night pop-up from the Roca brothers from El Celler de Can Roca, which topped the World's 50 Best Restaurants list in 2013 and 2015.
Brown will begin work in early May 2017, taking charge of the overall food and beverage strategy at the 160-room hotel.
He joins from a role as executive chef at rhubarb at Sky Garden in the City of London, and has also worked at London’s Chez Nico restaurant, The Ritz hotel and Home House private members club.
Hotel Café Royal’s current food and beverage outlets include the Ten Room restaurant, The Café, Green bar and Oscar Wilde bar.
