YO! Sushi to launch new concept at Boxpark Croydon

The restaurant will branch out from sushi to offer new twists on traditional Japanese cooking when it launches on 27 April.

Dishes will range from £2.50 – 8.50 and include a pork ramen roll; soft serve ice cream with crisp donut pieces, soy bean powder, pistachio and miso caramel; and sandwiched crispy fried chicken thighs in panko crumbs – traditionally served on Japanese bullet trains.

There will also be rainbow bowls of sashimi with pickled vegetables and mango; and a salmon and orange ponzu tataki served alongside Japanese beers and sake.

Though seafood will no longer be the main focus of the restaurant, YO! said it was focusing on sustainability and all fish would be 100% responsibly sourced. Menus have been made from recycled paper and each dish is designed to create almost zero food waste.

“YO! Boxpark is the perfect place for us to explore our Izakaya (Japanese pub) inspiration, allowing us to innovate and introduce playful sharing style dishes,” says YO! Executive chef Mike Lewis.

“It's all the type of food and drink that can be enjoyed and shared in the communal eating area, just like the back streets of Japan."

YO! Sushi first opened in Soho in 1997 and now operates nearly 100 restaurants in the UK, Dubai, Paris, Sydney and the USA.

Boxpark Croydon launched last year​​ and is home to 42 food and drink brands including Meatliquor, Breakfast Club and Chilango.
