Drake & Morgan reveals more on new site The Bothy
Opening on 8 May, the Bothy is one of several key new sites announced by the 12-strong restaurant group as part of its wider expansion plans.
It was first confirmed alongside the opening of a new Manchester site (after the existing Refinery in Spinningfields), and the rebranding of the 11-strong Corney & Barrow group, which D&M acquired in July 2016. The most recent of these were London sites The Pagination, and The Otherist.
The 11,522 sq ft space in a Grade-I listed warehouse will have 400 seats; 200 inside across a ground floor bar and lower ground floor restaurant, and 200 outside on a large riverside terrace with its own external bar.
The site will open seven days a week and serve an all-day menu of small plates and sharing platters ‒ including breakfast, weekend brunch, lunch and dinner ‒ and an extensive wine list, plus original cocktails, mocktails, and craft beers.
Its interior will be created by London group Fusion Design and Architecture, and aim to appear comfortable, warm, urban, and modern.
The design will incorporate many of the original warehouse features, including the timber beams, exposed floorboards, flagstone flooring, cast iron columns and deep-founded brick walls.
There will be a ‘statement’ central oak bar on the upper ground floor, plus an open kitchen and cocktail bar downstairs.
