More details have been revealed about US chef Marcus Samuelsson’s debut London restaurant, which is due to open next month at the Curtain Hotel in Shoreditch.

Red Rooster Shoreditch will open on 26 May and will showcase the Harlem chef’s take on American comfort food. Alongside the restaurant will be an all-day taqueria and bar on Curtain Road called Rooster Taqueria.

Red Rooster will have a large, dine-at open kitchen with adjacent DJ booth while Rooster Taqueria will feature a double height ceiling and large floor-to-ceiling windows.

The site will serve many signature dishes from the Harlem original, including Harlem fried chicken and waffles with pickles and hot bourbon maple syrup; pork and shrimp hot rice; and fried yardbird with gravy, yams, hot honey and collards.

The chef has also created a number of dishes that will be unique to the Shoreditch venue, such as duck kitfo, foie gras ganache and jicama; matjes with brown butter, horseradish, fermented rice and cured egg yolk; and steamed bass with poached egg, brisket and pickled vegetables.

The all-day Rooster Taqueria will serve a short Mexican-inspired breakfast menu as well as a concise list of tacos. Example dishes include bacon Cracker Jacks and pastor and lamb tacos.

Samuelsson announced last year that he would be bringing to east London the renowned restaurant and live music venue he opened in Harlem in 2011.

The Ethiopian-born, Swedish-raised chef also owns a string of restaurants in America and Scandinavia, including Streetbird Rotisserie in New York, Marc Burger in Chicago, Eatery Social Taqueria in Sweden, and Kitchen and Table in a number of sites in Sweden, Norway and Finland.

“I’m very excited to be part of the community at The Curtain,” he says. “This is something we’ve been working on for many years and we can’t wait to be a part of the London restaurant scene.”
