The cafe, restaurant and wine bar will also feature a wine shop on the lower ground floor when it opens on Weighhouse Street, just south of Oxford Street, in April.
Comptoir Café & Wine will be the second ‘Comptoir’ in Rousset’s portfolio. He opened Mediterranean restaurant and wine bar Blandford Comptoir on Blandford Street in Marylebone in 2016, followed by Cabotte, another wine-focused restaurant, which he launched in the City with fellow master sommelier Gearoid Devaney in autumn last year.
Rousset, who became the youngest master sommelier in the world in 2002, is also a part-owner of Greenwich Kitchen, near the O2 Arena.
The restaurant will serve small plates of wine-friendly French food such as charcuterie. The food will be overseen by head chef Ben Mellor, who was responsible for the menu at Blandford Comptoir.
Wines bought from the wine shop can be drunk in the restaurant with a corkage fee. The wine shop will also host private wine tastings.
Rousset parted company with Texture and 28-50 Restaurant Group, the company he co-founded with chef Agnar Sverrisson, in 2015 to concentrate on new projects.
