Chefs' Secrets of Success: Benoit Blin

Benoit Blin is chef patissier at the two Michelin-starred Belmond Le Manoir Aux Quat’Saisons, Raymond Blanc’s renowned restaurant and rooms in the heart of Oxfordshire.

Although a Frenchman by birth, he is a passionate advocate for pastry chefs and the development of pastry in the UK, and appeared as one of three judges – alongside pastry chefs Claire Clark and Cherish Finden ‒ on the inaugural series of the BBC’s professional patisserie TV show, Bake Off: Crème de la Crème.

He is chairman of the UK Pastry Cup Coupe du Monde, whose work includes supporting Pastry Team UK in international competitions (such as the most recent Coupe du Monde de la Patisserie in Lyon in January, in which the team came 8th out of 22 nations), and helping nurture young and promising pastry talent.

We caught up with him to talk about his love of sweets, what motivated him to become a pastry chef specifically, and his tips for young chefs today…
