His appointment will see Chewton Glen’s executive chef Luke Matthews take a step back from his day-to-day role and focus on new projects such as The Kitchen, the upcoming cookery school and restaurant opening in partnership with ex-Chewton Glen chef James Martin on the hotel estate in March 2017.
Addison, who was previously head chef at Homewood Park Hotel & Spa in Bath, plans to introduce new dishes to the Dining Room menu using Hampshire and south of England produce.
“The team and I are looking to introduce some exciting menu changes, while respecting a few of the old favourites that the guests love,” said Addison.
Chewton Glen is part of the prestigious Relais & Chateaux hotel collection and features 70 bedrooms, including 12 ‘treehouse’ suites, a golf course, croquet lawn and spa.
