Borough Market opens restaurant using traders' produce

Borough Market has opened its own restaurant serving dishes created entirely from produce sold by its resident traders. 

Running for two months from today (17 January), Borough Plates will profile one or two stalls per week and cook using their ingredients in different ways.

Traders will appear at the restaurant to talk to diners about their work, while the chefs will help with service and explain their cooking techniques to customers.

A weekly rotating line-up of London-based guest chefs will work with Paul Hannagen’s high-end private dining firm Cuisson to create the menus.

“The new pop-up presents an innovative step forward in the relationship between supplier and chef,” said Hannagen.

“We are excited to be working so closely with traders and cannot wait to give diners a behind-the-curtain look at how the dishes are put together.”

Dishes are priced from £6-£16 and currently include charcuterie from Cannon & Cannon; Red Mullet caught by Sussex Fish served with Seared Scallop and Rainbow Chard; and a Raw Milk Pannacotta from farmers Hook and Son.

The restaurant is open within the market at the former offices of the Borough Market trustees at 1 Cathedral Street.

Darren Heneghan, managing director of Borough Market, said: “This is a chance to showcase some of the amazing food sold at Borough Market, highlighting the wealth of ingredients and products available by inviting some of London’s hottest culinary talent to work hand in hand with traders to create something really special.”

A spokesperson for Borough Plates told BigHospitality that there were currently no confirmed plans to extend the pop-up beyond its initial run.

Borough Plates is open Tuesday – Saturday 12pm-10pm.
