Portuguese chef Nuno Mendes is best known for his erstwhile Michelin-starred Bethnal Green restaurant Viajante, which opened in 2006 (and was included as one of the World's 50 Best Restaurants), followed by his role as head chef at high-end Marylebone site The Chiltern Firehouse, and now at his own Portuguese-inspired site Taberna do Mercado in Spitalfields.
His career has also included training at elBulli, the California Culinary Academy, and the Bacchus pub, that he opened in Hoxton in 2006.
Here, in this interview (with his head chef Patrick Powell at The Restaurant Show in late 2016), he gives young chefs his top tips for success.
