Matt Gillan to open debut Brighton restaurant

Chef Matt Gillan has confirmed he will open his long-awaited debut restaurant Pike and Pine in Brighton in 2017.

The Great British Menu finalist will launch his new venture at the Red Roaster coffee house in the city’s Kemptown area next year.

The site will continue to act as a coffee shop during the day, before transforming in to the Pike and Pine restaurant at night.

Gillan said in a statement that he would be maintaining the ‘passion, enthusiasm and knowledge’ of the ‘Brighton institution’ that has served coffee in the south coast city for the last 16 years.

“[We will] add an unbelievable world class food offer alongside it and transform Red Roaster in to our modern day interpretation of a coffee shop,” the chef wrote on his Facebook page.

"At Pike and Pine the food will very much be along the lines of what I have been known for over the last few years, but still continuing on a journey of discovery and learning, delivering a truly unique food offer for the city.

“The end result will be amazing and I can’t wait to share more with you.”

Gillan spent a decade cooking at The Pass restaurant at South Lodge in Horsham which saw him hold a Michelin Star for five years.

He left the restaurant in April this year and has since run a series of pop-ups at Lucky Beach on Brighton seafront.

Further details of Pike and Pine will be released in the run up to the opening.
