Le Gavroche in hot water
Michel Roux Jr's restaurant Le Gavroche is to further cut its opening hours by March 2017 after an investigation revealed some staff were working 14-hour days for less than minimum wage. The restaurant said it had raised wages and would start closing for lunch on Tuesdays while keeping salaries the same.
Eden Hotel
The Eden Project has revised plans for an £8.5m on-site hotel following public backlash over the original design. The new-look project, which uses stone and timber poles to blend in to the surrounding countryside, will open in 2018 if plans are approved.
Prison charity success
The Clink Charity - the hospitality training scheme at UK prisons - has reduced re-offending rates among male prisoners by a 'significant' 41 per cent, according to a Ministry of Justice report. The charity said it was planning to build on its success by expanding from six to 20 rehabilitation programmes by 2020.
Festive chef crisis
Restaurants are facing a major staffing crisis this Christmas as recruitment agencies struggle to find chefs for the busy festive period. An REC study found that just 18 per cent of agencies said they had enough chefs to fill the gaps, while 83 per cent expect the shortage to worsen in 2017.
Lantern by the sea
Brighton sushi restaurant Moshimo has received planning permission to build a seven-storey 'lantern in the sky' extension next year. Co-owner Karl Jones told BigHospitality the £4m restaurant would be constructed along the coast in Littlehampton, before being transported to Brighton by sea.
