The Young British Foodies 2015 Chef of the Year is teaming up with expert forager Anton Petrov to present the seven-course vegetarian tasting menu, which will celebrate the freshest handpicked Autumn produce from Britain’s forests, marshes and seaside, and cost £38.50 per person.
Rawson and Petrov have already pickled and preserved a few top quality ingredients, including hen-of-the-woods mushrooms and seablite capers (a native shrub).
The duo will also seek out wild mushrooms, wet walnuts, geisha quince, wood sorrel, rosehips and nasturtium, as well as baby seaweed and sea beets for their menu.
They will document their discoveries on their Instagram accounts during their expedition, to give diners a preview of what is in store at the supper.
At the beginning of the year, Rawson left his job as head chef of Marylebone Peruvian restaurant Pachamama, to pursue plans to open his own restaurant. He was previously chef at burger group Lucky Chip and erstwhile east London group White Rabbit.
He was also described as London’s Hottest Young Chef by the Evening Standard and was winner of the Slider Decider burger challenge in 2015 and 2016.
He has spent over a decade cooking in the UK and trained under chefs including Nuno Mendes, Claude Bosi and Gordon Ramsay, and is known for his international cooking style and passion in using the best quality produce.
