The 140-cover restaurant will open on a two-storey site in Winchester Walk, close to Borough Market in February 2017.
Beckett said Borough Market had been his and Gott's 'first port of call' in the search for suppliers for the restaurant group 10 years ago as part of the plan to 'buy the bet and prepare it as simply as possible'. The market was where the pair first came across its meat supplier Ginger Pig and others integral to its success, such as Neal's Yard Dairy, Isle of Wight Tomatoes and Borough Wines.
“We have always dreamed of opening a restaurant in the area. There’s something really special about being on our suppliers’ doorsteps, and as Borough was such an influence on us in the early days it feels like, 10 years later, we are coming home," he said.
"Borough Market gave us inspiration, contacts and produce – we would like to be able to repay it by creating a special restaurant that celebrates its produce and becomes a long-lasting institution of and for the local area.”
Restaurant interior
Hawksmoor Borough will open in a 19th Century building previously used as a hops warehouse by Wood, Field and Hanbury and later as a fruit auction and warehouse by J O Sims.
Gott is currently overseeing work being carried out by architects Macaulay Sinclair to turn the site into a restaurant.
“The building has lots of existing character. We’re going to sensitively build the restaurant’s interior around this heritage. It’s a very exciting project," he said.
Hawksmoor Borough, which will open for lunch and dinner seven days a week, follows Hawksmoor's fifth London site in Knightsbridge which opened in 2014. The latest London site will open before Hawksmoor New York. The company's first international outlet is scheduled to open at the end of next year in the New World Trade Center.
