Ynyshir Hall rebrands as Ynyshir in new restaurant-with-rooms focus
Set to open in September this year under new ownership, the business’ emphasis will be on its eponymous, 26-cover fine-dining restaurant.
Menus will be overseen by Michelin-starred chef Gareth Ward, who first joined the restaurant in 2013 and won a star within his first full year, followed by four AA Rosettes. He previously worked at Restaurant Sat Bains in Nottinghamshire, and Hambleton Hall in Rutland.
The former hotel will continue to run 10 high-end bedrooms, each with its own design and views across the surrounding landscape and RSPB bird reserve.
Menus will start at £95 per person for a choice of two tasting menus, with typical dishes such as sweet and sour mackerel, and Ward’s take on tiramisu.
There will be also be a six-seat chef’s table within the kitchen itself, which will offer a £130 per person ‘surprise tasting menu’ tailored to the guests by Ward.
Ingredients will be sourced from the local area, with Ward bringing elements of his interest in Japanese cuisine. An example of this mix of influences includes the marble-rich Welsh wagyu beef, sourced from a farm in Montgomeryshire – whose cows are raised on clover pastures and a daily bottle of Monty’s beer.
Both restaurant and the rooms will be closed on Sundays and Mondays.
