According to BigHospitality's sister publication MCA Insight, The new concept, which is led by Tiffany Renwick, will convert the Strada in St Paul’s to its fourth Coppa site over the coming weeks, with a re-opening planned for 22 August.
MCA understands that the group’s existing sites in Tower Bridge and at Market Place are both exceeding expectations.
The group plans to continue to bed in these two sites and the upcoming St Paul’s opening before looking for further locations.
Sun Capital Partners has appointed Renwick as managing director of its fledgling Coppa Club format earlier this year, with Tom James, operations director, overseeing the evolution of sister brand Strada.
Renwick has been an investment associate at Sun Capital since October 2013 and before that worked as a brand manager at L’Oréal.
Coppa launched its first London site on Monday 30 May, next to the Tower of London overlooking the Thames, Tower Bridge and HMS Belfast.
It followed that by converting the Strada in Market Place near Oxford Circus to the brand, which was launched in Sonning, Berkshire, in 2014.
