Named Ormer Mayfair - taking on the same name as Rankin’s flagship Ormer site on the island of Jersey - the restaurant will open on 14 September and have 85 covers plus a 40-cover bar.
Expected to open its own separate entrance on Clarges Street by autumn, the restaurant will offer a menu inspired by Jersey but with a “Mayfair twist”. There will also be a 20-seat private dining room.
The menu will emphasise British heritage, the history of Flemings hotel, foraged herbs, English wines and seasonal produce. Typical dishes will include hand-dived scallops from the Channel Islands, Jersey lobster ravioli in a crab and lemongrass bisque, and venison loin with Medjool dates, with desserts such as double chocolate brownie with salt caramel and milk ice cream.
The decor has been created by interior designers Tully Fulmer, and will feature dark wood panelling, British racing green leather and velvet banquette seating, and bronze highlights designed to echo the glamour of the 1930s Art Deco period.
Flemings Mayfair also offers food within its Drawing Room, as well as a selection of afternoon teas.
Rankin, formerly chef at Bohemia in Jersey and best known for his work at St Helier's Ormer, also opened a London Mayfair restaurant last year, at exclusive members’ club 12 Hay Hill, at which membership began at £150 per month for access to hot desking facilities, a bar, lounge, and gym.
