Simon Rimmer to open second gastropub The Viking
TV chef Simon Rimmer is to open a second gastropub in Merseyside this year.

The star of Channel 4’s Sunday Brunch will launch The Viking pub and bakehouse in West Kirkby.

Rimmer confirmed on Twitter that the site would be the second venture for his pub business Flying Pig & Lobster Ltd.

The company - which Rimmer runs with Revolution Bars co-founder Roy Ellis​ – first launched The Elephant in Woolton Village in Liverpool in 2014.

Now Flying Pig & Lobster has requested planning permission to develop the former Hiltop Pub in West Kirkby.

Plans include an extension of the ground floor kitchen and transforming the existing bar lounge in to a large dining room.

Ellis told BigHospitality's sister site MCA that the new site takes its name from being located on a Viking settlement and will have 'a Scandinavian feel running through the design, food and drink' but 'won’t be a theme pub'.

Rimmer opened vegetarian restaurant Greens in Manchester in 1990 and went on to launch Earle, a modern brasserie in Cheshire, in 2006.

The Viking is set to open in summer 2016.
