To tackle the staff shortage, many chefs, like Sat Bains, Michel Roux Jr and James Close, made big changes to work hours.
A raft of new concepts came to fruition including Grub Kitchen, the first UK restaurant to put insects on the menu and crowdfunding continued to grow in popularity as a funding method for new and existing companies in the sector.
In November, we saw the creation of the world’s largest hotel company with Marriott and Starwood merging leading to speculation for brand changes and further consolidation in the market. Accor made the predictions a reality with the news earlier this month it had bought the luxury brands Swissotel, Fairmont and Raffles for £1.9bn. Who will be next?
In any case, we expect 2016 to be an interesting year in hospitality.
