Ex-Salt Yard chef opening 90's inspired Soho chicken restaurant
Ex-St John and Salt Yard chef Billy Stock is opening a new Soho fried chicken restaurant which claims to cook-up ‘the best chicken burger in the capital’.

Billy and the Chicks will serve ‘a unique London take on fried chicken’, inspired by Stock and co-founder Sam Bellamy’s memories of growing up in South London.

“Fried chicken is my nostalgic meal and for many others born around the late 80’s and early 90’s, which is why we wanted to open an authentically London fried chicken shop,” said Stock.

“We are keeping it close to our hearts of when we were kids, in a place that’s close to our hearts as adults."

Stock said chicken at the 52-cover site would be ‘simple and delicious‘, served with a signature secret herbs and spice mix vastly different from its American counterparts.

Sides will include three cheese fondue based on Mac ‘n’ Cheese, Jamon Iberico bone stock beans and Maris Piper chips.

The bar will serve cocktails inspired by childhood favourite fizzy drinks such as Professor Nick (an alcoholic Dr Pepper), Guilt (inspired by Lilt), Cherry Up (inspired by Cherry 7Up) and Banana Cream Soda.

Billy and the Chicks is the latest in a boom of gourmet fried chicken restaurants expanding in the capital, including Carl Clarke's Chick'n'Sours​, BIRD, and Chooks.

The restaurant will open on 4 December at 27-28 St Anne’s Court, Soho.
