Zelman Meats: Steakhouse opening in Soho

The team behind Goodman, Beast, Rex & Mariano and Burger & Lobster, are launching Zelman Meats in Soho, London, in November.

The restaurant will cater for 94-covers plus a private dining area with space to serve 16-covers.

Operations manager Dave Strauss told BigHospitality that Soho is lacking a ‘great steakhouse’ and that Zelman Meats can fill that void.

“Soho doesn’t yet have a great steakhouse and we think we can take care of that,” he said.

“If it works as we hope there will be some of our Goodman regulars entertaining clients, our Burger & Lobster guests with their families and local workers on a quick lunch break all enjoying the restaurant equally.”

Strauss said that Zelman Meats will serve as a more-accessible alternative to Goodman.

“We love Goodman but it is incredibly complicated with all the different cuts, breeds of cattle and various lengths of dry aging time so it is expensive and therefore not available for everyone,” he said.

“We feel that Zelman Meats has the flexibility to be enjoyed by a much wider crowd of people. It is like an apprenticeship for Goodman.”

Sticking to what they ‘know best’, executive head chefs Oliver Bird and William Horswill will purely serve beef, cocktails and wine at the no-menu steakhouse.

Strauss said: “We would rather do one thing really well rather than multiple things half-arsed.”

The restaurant will also host a weekly meat raffle where guests can win 1kg of meat cooked for them, with the only cost being any extras that they order.
