The Corner House: April opening for Canterbury restaurant

Kent-based chef and restaurateur Matt Sworder will open a second The Corner House restaurant in Canterbury next year after acquiring the freehold of the city's The Flying House pub. 

Sworder currently runs The Corner House in Minster, Kent, and plans to introduce the restaurant’s focus on local, fresh and homemade produce to the new site when it opens next April. 

“The menu will be short and dynamic with many 'Of The Day' dishes. Whilst there will be dishes that make it a Corner House restaurant, each kitchen has its own head chef and a creative licence has to come with each. As chefs we are a creative bunch and I enjoy working with the team on new dishes,” he said.

On the menu at the 50-cover restaurant will be New Church Lamb Shoulder for four, Dauphinoise Potatoes and seasonal vegetables, and Bethersden Beef Brisket with triple-cooked Chips, Coleslaw and Salad with homemade mushroom and tomato ketchups.

Having purchased the freehold with his father for £500k through Fleurets, Sworder will replicate the design of his Minster restaurant's contemporary and rustic interior with an open plan visible kitchen.

Sworder said: “It’s a beautiful period building with some stunning features so the refurbishment will be focused on celebrating each feature, maintaining the buildings natural character. I am working with some fantastic architects who have been tasked with breathing new life into the second oldest pub in Canterbury.”
