CôBa Vietnamese barbecue restaurant opening in London
Vietnamese-Australian founder, Damon Bui, is opening the restaurant in the Kings Cross/Caledonian Road area.
On his menu will be classic dishes inspired by his mother, a Vietnamese refugee who arrived in Australia without speaking any English, as well as his own modern additions. The menu is split between barbecue meats cooked on a charcoal grill and soup noodles.
The name is also inspired by Bui’s mother: CôBa means ‘auntie number three’, her family nickname.
"I see it as a way to honour both of my parents, the great life they’ve provided for me and my sisters, and the amazing food that mum cooked at home and passed on to me when I left to Australia and moved to the U.K. 11 years ago,” Bui said.
Before opening CôBa, Bui worked in a bank and cooked for friends before occasionally running a street stall called Table for 10. It was the feedback from this venture that shaped his vision for the restaurant.
"With all the positive feedback, I thought I had something special to offer, that London needs, so I became hell bent on creating my dream restaurant,” he said.
"We can’t wait to bring to London our special combination of great food, great drinks, and great hospitality."
Bui is a believer in the responsible capitalism model and is hoping to tempt staff by offering them a percentage of a profit share scheme and he will give them 100 per cent of the service charge.
