Paul Adams, owner of The Vincent Hotel in Southport, says he will consider opening more all-day dining restaurants under the Vincent name if his new site in Liverpool is a success. 

The hotelier, who also co-owns The Warehouse restaurant in Southport with footballer Steven Gerrard, will open a standalone all-day dining concept Vincent Café and Cocktail Bar at Exchange Flags in Liverpool's business district in May. 

The 190-cover 6,000 sq ft restaurant will serve a mix of British and international dishes, including 'playful and eclectic' dishes such as Gringo Sushi - a meat alternative to the traditional fish - from breakfast through to dinner. 

Adams, who opened The Vincent Hotel in 2008, told BigHospitality he'd been looking for a site in Liverpool for a few years for a restaurant and cocktail bar, since the hotel's restaurant had been such as success. 

"I always say satisfy the palate and the rooms will follow," he said. "The food side at the hotel has been very successful, so I decided a few years ago to look for a site in Liverpool. 

"The Vincent Cafe and Cocktail Bar is something new - it's completely separate from the hotel and it doesn't have a hotel attached, but it is in a good position in what is becoming a very good area for restaurants." 

He added: "The Vincent in Southport works, so I feel that the one in Liverpool has got a fair chance of working and that the concept of offering breakfast, brunch, lunch, afternoon tea and dinner is a very strong one that will work for everyone." 

Rollout

Adams, who is set to close The Warehouse, which he co-owns with footballer Steven Gerrard, on 6 April to focus on his Vincent brand, said a rollout of his new concept was a distinct possibility, but would be done slowly. 

He said: "I really admire those entrepreneurs who start off small and grow and raise funds. It's an incredible achievement, but it's hard work to get the first place going, nevermind number two or number 10. I won't say casually that I'm going to conquer England, because I don't think I will, but I'll try. If Liverpool is a success then yes, I would look at doing more." 

Adams, who works with a number of silent investors, said he would consider all cities and locations for another site. "Who knows, we may even come to London," he said.
