Parle opened the first stage of Craft London - a café and roastery - on the ground floor of a building that forms part of the Greenwich Peninsula development last October. He will open his restaurant and bar on the first and second floor of the same building this Spring.
The chef is collaborating with designer Tom Dixon on the project, and the pair are working with with modern artisans to develop processes for coffee roasting, meat curing, bee keeping, fish smoking and vegetable fermentation.
Parle is also developing a kitchen garden, and will source rare British meats and game, as well as fruit and vegetables produced using traditional growing techniques such as clamping and forcing.
The restaurant will serve an a la carte menu as well as a tasting menu, a pre-show set menu and a lunch menu. Many of the dishes will be cooked on a huge hearth in the centre of the kitchen.
The bar will feature a large outdoor terrace with views over the Thames, Canary Wharf and the O2 arena.

Steve Parle trained at the River Café, Moro and Petersham Nurseries, before opening his first restaurant Dock Kitchen in Tom Dixon's showroom back in 2009. He opened his second venture, Italian restaurant and wine bar Rotorino, last April.
He writes a weekly food column in the Saturday Telegraph Weekend and has also published three books, contributed to British food magazines and co-presented Channel 4 series The Spice Trip.
