Simon Brigg who established the restaurants told M&C Report he is looking at sites across central London including Exmouth Market and Soho and hopes to have opened another two restaurants by July.
Porky’s is raising money through the Enterprise Investment Scheme to facilitate its growth targets.
Brigg said the three current restaurants enjoyed “a very good Christmas” with high booking rates for lunches at the Bankside restaurant owing to the dense office population in the area; the original Camden restaurant performed as “its usual festive self” with high traffic of tourists in and around Camden over the Christmas and new year period.
Brigg said the newest site at Shoreditch’s Boxpark, which opened in October, is likely to be a more popular summer destination with outdoor and exposed seating and consequently was quieter over the festive period.
The company, led by husband and wife Simon and Joy Brigg, opened its first site in Camden in 2013 followed by the Bankside restaurant in early 2014 before adding the Shoreditch site.
The concept is based on slowed cooked BBQ ribs, pulled pork and smoked chicken alongside burgers, craft beers and quirky cocktails.
