Amandine Chaignot describes her cooking style as 'fresh, generous and real'
French chef Amandine Chaignot has joined Rosewood London as executive chef where she will oversee the hotel's kitchens and restaurants, including the Mirror Room.

Chaignot joins the Holborn-based hotel from Hôtel Raphael in Paris where she was executive chef for two years. She will take over from Bjorn van der Horst who left the role last autumn to pursue his own project. 

The French chef, who worked with Alain Ducasse and Jean-François Piège at Hôtel Plaza Athénée before going on to Le Bristol and Le Meurice, said: "I am both proud and excited to join the Rosewood London team. There is a great, positive energy within the hotel and I strongly believe that London is one of the world's most exciting culinary destinations." 

Chaignot will now work on creating some new menus for the hotel's Mirror Room restaurant before launching them in a few weeks' time.

The 35-year-old, who gave up a postgraduate degree in pharmaceutical studies to pursue a career in cooking, defines her modern French cooking style as ‘fresh, generous and real’ with a respect of French traditions. 

She joins Rosewood London just over a year after it opened within the former Chancery Court hotel​. The hotel opened in London in October 2013 following an £85m revamp.
