Brasserie Bar Co opens fifth pub

The Brasserie Bar Co is to open its fifth pub under The White Brasserie Company branding next week;  The Sun Inn in Surrey.

The Sun Inn will be located on the High Street in Chobham in a seventeenth century building with a number of original features.

The expansive open bar area to the front of the pub will seat 50, and at the back of the building a newly built extension will house a 96-cover brasserie. There will be additional seating outside, with 34 covers in the front garden and 44 covers in the walled courtyard garden at the back.

In terms of design, The Sun Inn will have a ‘classic’ look and will feature original timber flooring, wood burning stoves, exposed oak beams, leather banquette seating and ‘relaxed’ lighting. The extension at the back of the building has been designed to draw on the look of stable buildings in the local area.

Food and drink

The Sun Inn will have a seasonal menu which is a mixture of traditional British pub food and French brasserie dishes. The menu has been put together by executive chef Clive Fretwell.

Starters on the menu will include coastal cheddar cheese soufflé, Burgundian snails in garlic butter, and home-smoked Shetland Isles salmon tartare. Main dishes will include slow-roasted pork belly with chateau potatoes and poached crab apples, and Scottish wild venison casserole with winter vegetables.

There will also be a range of ‘classic pub dishes’ such as pie of the week, a range of steaks, and Sunday roasts. A separate children’s menu will be available.

The Sun Inn will also have an extensive wine list with a number of ‘French favourites’ and its own sparkling wine; Mousseux Premium Blanc de Blancs. Draught beers and bitters will be available, as well as a selection of classic and premium cocktails.

Recent expansion

The Sun Inn will be the latest pub to open as part of the company’s extensive expansion plans, which will see 20 pubs opening over the next three years. The planned roll-out is happening as a result of funding the company secured from ESO Capital Group.  

This opening comes shortly after the opening of The Hare in Harrow, and The British Queen in Orpington.
