Chai Wu is Lim’s third restaurant to open at the London department store, following the arrival of Pan Chai and Mango Tree in 2012.
The 90-cover restaurant will serve a menu developed by head chef Bihu Xie and group executive chef Ian Pengelley, both of whom specialise in Asian cuisine.
Starters will include soups, dim sum and small dishes such as Chilean sea-bass dumplings with gold leaf and a Wagyu and black pepper puff. Mains will include a variety of à la carte dishes and fresh meat, fish and vegetables grilled to order, such as poussin with spicy chilli-lime dressing.
Singature dishes will include Beijing duck, Alaskan king crab with soy glaze, and lotus root and lily bulb in a spicy toban sauce.
The restaurant interior has been ‘inspired by the five elements in Chinese philosophy: wood, fire, earth, metal and water’ and will incorporate a mix of marble, leather and timber finishes. It will feature a charcoal grill at its centre, with a dining bar around it giving guests the chance to watch the chefs in action.
