The Doyle Collection will reopen its 108 Bar & Grill restaurant in Marylebone on 3 November after a complete renovation.

The renovation will see the restaurant split into two separate areas; the bar, which is open for all-day dining and drinking, and a more formal dining space which will concentrate on modern British cuisine.

The new interior has been designed by Alexander Waterworth Interiors, and will feature red leather and orange mohair upholstery, a stained-oak bar, and antique mirrors to add depth to the room.

108 Bar & Grill will be closed for three weeks while the renovation takes place and will open under the leadership of a new team.

The bar area will be run by Ivo Ferreira da Silva, who will join the venture from The Athenaeum Hotel. The kitchen will be headed by executive chef Russell Ford who previously worked at The Grove, while Tanya Yilmaz, formerly of The Club at The Ivy, will act as general manager.

British flavours

Once it reopens, 108 Bar & Grill will serve a menu of simple British dishes using seasonal produce from local suppliers, including a Josper Grill section that focuses on grilled meat and fish dishes.

Starters on offer will include options such as octopus carpaccio with a tomato and chilli dressing and Argyllshire smoked salmon on Guinness brown bread. Mains on the menu will include roasted monkfish served with curried lentils and crispy shallots and spelt risotto with wild mushrooms and Bosworth Ash goat’s cheese.

The separate bar area will serve a menu of small plates that will change every week, with dishes including foie gras and black truffle sausage roll, Coca Cola chicken wings, and baked camembert with roasted garlic and rosemary.

The wine list will have over 40 bins and include an English sparkling wine to reflect the British theme. The cocktail list will also take inspiration from British flavours and includes drinks such as The 108 Edition, which is a blend of Maker’s Mark, spiced orange liqueur, Drambuie and angostura, and the Thyme Out, a mixture of gin, cucumber and thyme-infused Midori with lime and kiwi.
