M will be located in a 15,000sq.ft space on Threadneedle Walk. The venue will include two 100-cover restaurants, a wine tasting bar, a cocktail bar, private dining rooms, event spaces and a secret den.
It is the first solo venture by Williams, who has assigned Francesco Cappucci (formerly of Corinthia Hotel and Cecconi’s) as restaurant director and Mike Reid (head Chef at Jardin Tan) as executive chef.
Kobe beef and Blackmore Wagyu
M’s menus will include a range of steaks and it will be the first restaurant in Europe to serve grade 10++ Japanese Kobe beef and Australian Blackmore Wagyu beef.
“I’ve travelled the world and worked with a lot of beef in my life,” said Williams. “For me, Japanese and Australian beef are the best in the world.
“In Kobe and Blackmore Wagyu, I have selected the two producers which are at the very top of their industry and are unrivalled in quality. They are in a league of their own and we can’t wait to bring them to diners’ plates in London.”
The Kobe beef will cost £150 for 150g of the fillet, while the Blackmore will cost £120 for 200g of the sirloin.
M Grill
M will include an international grill restaurant that will specialise in steak cuts from six selected countries around the world. It will also offer a range of exotic meats such as crocodile and kangaroo.
The grill area will feature a ‘walk-in aging room’ where butchers will offer master classes in beef. Guests will also be able to select the precise cut and size of steak that they want.
“At M Grill, I wanted to select only one steak from six different countries to bring a potential planet of steak to our guests’ plates,” explained Williams. “The range of steaks is the finest and includes our favourite cuts from the USA, Argentina, France, Botswana, Australia and Japan.
“The French Onglet and Argentine Rump Steaks are both priced well under £20, as I wanted to keep the restaurant prices very accessible. Though if customers want to blow the budget and taste something completely unique and thus far not offered in London, we can accommodate for that too.”
M will also house the Tartare and Tiradito Bar which will serve a selection of tartares, sashimi, pulsing salads, cured and smoked dishes and yakitori.
