Johansen, who grew up in Norway and trained at Leith’s School of Food & Wine before working in some of the UK’s top restaurants, wants to promote the Scandinavian diet as one of the ‘healthiest and most delicious’ in the world.
“The great thing about Scandinavian food is how accessible it is to everyone - we use lots of similar ingredients to those found here in Britain, but we like to put our own twist on them,” she said.
“You'll find that this is a food culture bursting with exciting, vibrant dishes that are steeped in Scandi traditions such as curing, smoking, pickling and preserving.
“Not only does this food taste delicious, but it's good for you too!”
The new recipes include Spiced Jarlsberg Gougeres, Roast baby pumpkins stuffed with Jarlsberg, kale, shallots, sage and pearled spelt, and Mini Jarlsberg Pizza with Prawns, Tomato & Avocado.
