60-Second Skill: The perfect latte

With the growth of coffee culture in the UK in recent years, having a decent coffee offering has become indispensable. Here Andrew Tolley, co-founder of Harris + Hoole and head judge at the UK Barista Championships, demonstrates how make the perfect latte.

First, remove the handle and purge the group head to get rid of all coffee grind.

Empty the basket and wipe it to remove all particles.

Fill the basket with fresh coffee, ensuring even distribution.

Make sure your temp is level and press the coffee into the basket using your body weight; then wipe the top and sides.

Insert the handle and brew the coffee immediately.

While the espresso brews, purge your steamer and pour milk into a jug.

Steam the milk by holding the jug at an angle, letting air in at the beginning, until you reach a glossy texture.

Finally, pour the milk into the espresso, tilting cup and jug to create latte art.
