Development Chef Club Food Forum: line-up revealed

The line-up of chef speakers and demonstrators has been announced for Restaurant Magazine’s new event the Development Chef Club Food Forum which is taking place at Westminster Kingsway College on 1 October.

The first Development Chef Club Food Forum in partnership with Farm Frites will showcase a range of chef talent, from those who run a single restaurant to those who put together the menus for large or expanding restaurant brands.  

It is a full day event with a particular focus on cooking demonstrations, offering key industry insight to development or executive chefs and heads of food. There will also be expert advice on menu planning, sourcing and new products.

The line-up:

James ‘Jocky’ Petrie

Petrie is the former head of creative development at The Fat Duck and will speak about his new role as development chef at Brett Graham’s two-Michelin star restaurant The Ledbury.

Graham Hornigold

Hakkasan Group’s executive pastry chef will be demonstrating how to make a selection of the desserts on the group’s menu, as well as talking about its international expansion plans.

Scott Hallsworth

Kurobuta’s founder will re-create some of his most popular dishes and discuss his ‘junk food Japan’ approach to tempting a mainstream audience to his dishes

Vivek Singh

The chef from The Cinnamon Club, Cinnamon Kitchen and Cinnamon Soho will offer an insight into bringing authentic Indian food to the casual dining market.

Ben Tish

The Salt Yard Group’s chef director will demonstrate dishes and talk about keeping a certain standard across his four restaurants.

Ajay Barak

The director of food development at Le Bistrot Pierre will speak on building an authentic French menu which appeals to older diners yet manages to keep cost-effective.

Harry Kodagoda

The director of food at Anglican County will dissect the evolution of pub grub.
