Ice cream equipment manufacturer Carpigiani has launched the HE Maestro Batch Freezer, which can create frozen gelato or warm dessert bases and toppings in one appliance. 

Product details:

The HE Maestro Batch Freezer features Carpigiani’s Hot-Cold-Dynamic system and has an improved efficiency of 30 per cent. The machine uses an algorithm that is able to electronically control the thermostatic valves, high efficiency motors and new high performance condensers to determine the maximum efficiency for the individual mix.

It comes with a digital display guide to help users through each stage of production, allowing for adjustments to temperature, speed and timing, and suggesting ingredients to add. It is pre-set with 14 gelato programmes including two for Sicilian slush and cremolata. It also has 18 pre-set pastry programmes.

Inside the cylinder it features independently controlled POM beater blades to help the complete extraction of the finished mix. When finished, the HM Maestro uses a cooling function to inject cold into the gelato as it comes out of the cylinder to maintain the consistency.
