Seventh opening for The Stable

Craft cider and pizza venue The Stable will be opening a site in Falmouth on 28 August.

The company, in which Fuller’s acquired a 51 per cent stake in June 2014, has spent the past year refurbishing the old custom house building that will host its newest restaurant.

“It’s a beautiful old building with great history and significance in the area” said co-founder Richard Cooper.

“All of our restaurants are in unique buildings with real character and this one is no different. We’re really excited to be opening in such a special venue in Falmouth.”

Concept

The Stable already has six sites across the West Country, and operates on a concept of authentic, fresh and locally-sourced ingredients with rustic interiors.  The menu includes stone-baked sourdough pizzas served on breadboards with cutters, and down 80 different types of West Country cider.

The first site opened in 2009 under the initiative of Richard and Nikki Cooper, in a 17th-century stable block in Bridport, Dorset.

Fuller’s bought its majority stake in the business for £7.3m back in June – a cash injection that aimed to help finance the couple’s expansion plans, with an option to increase investment in the future.

Clear brand proposition

At the time, Jonathon Swaine, managing director of Fuller’s Inns, said: “We knew we wanted to work with Richard and Nikki the minute we set foot in The Stable. It’s everything we value at Fuller’s – a commitment to freshly cooked, local food, a wide range of interesting premium drinks, a genuine focus on people development and a long term vision of where the business is going.

“The Stable has a very clear brand proposition and appeals to a demographic that is perfectly in tune with Fuller’s existing customer base. Richard and Nikki’s entrepreneurial skills will be an asset to Fuller’s and we can add our experience of operating in the wider southern counties, as well as years of experience at multi-site operations, to their business. We believe The Stable has great potential to expand across our core southern trading area. It’s an exciting time for both of us.”
