Simon Gregory joins Ace Hotels London Shoreditch
Gregory, who spent the last eleven years working for Ramsay, will act as executive chef for the Shoreditch hotel, overseeing its food offering including modernist brasserie Hoi Polloi and the newly-opened 7th floor private dining and event spaces.
“I am really excited about the move, joining such an exciting and forward-thinking team,” said Gregory.
“I’m also looking forward to my new working life in Shoreditch – what a great time it is to be here, especially from a chef’s point of view.”
Ace hotels
The American-owned Ace Hotels was founded in 1999, and opened its first UK property, Ace Hotels London Shoreditch, at 100 Shoreditch High Street in September 2013.
The hotel group partnered with Bistroteque founders Pablo Flack and David Waddington to create Hoi Polloi, which offers relaxed all-day dining and a seasonal British menu.
Gregory will replace former Hoi Polloi executive chef Simon Henbery.

Originally from Australia, Gregory joined Gordon Ramsay Restaurants in 2003 and rose through the ranks to become one of Ramsay's most trusted lieutenants. He was promoted to group executive chef in 2011.
It emerged that Gregory was leaving Gordon Ramsay Restaurants last month, when the group announced the appointment of Nichloas Grounin as food and beverage director. Grounin has previous experience at Alain Ducasse and D&D, and is supporting chefs and GMs across the group in his new role.
