Located between Chavasse Park and the Hilton Hotel, it will be the first Bill’s in the city, and the brand’s second restaurant in the North West.
Scott Macdonald, Bill’s co-managing director, said: “We are very excited to be opening in Liverpool ONE and confident that the addition of a Bill’s restaurant will add something a little different to the already diverse mix.
"As we are open from early in the morning until late at night, it’s important we choose locations that will deliver customers and Liverpool ONE is ideal for us, with its growing footfall of local and international customers throughout the day. Plus, of course, the context and surroundings are a perfect fit, as the quality of the locations we choose is key to our success.”
Asked about further expansion in the North West, Macdonald told BigHospitality: "It’s certainly an area we are keeping an eye on. What Bill’s offers stretches across so many demographics and tastes, and so far we have been very lucky with each new restaurant proving to be very popular with the locals. So, there is every reason for us to continue opening restaurants in the North West and the North in general."
Miles Dunnett, head of asset management at Grosvenor Liverpool Fund, the firm that manages Liverpool ONE, added: “Bill’s is a great new brand for Liverpool ONE. Their ‘breakfast to bedtime’ offer is perfect for Liverpool ONE, particularly in this location given its proximity to Liverpool ONE’s hotels and the wider city centre context.
"With Liverpool ONE’s footfall continuing to grow, and the city holding the position of the fastest-growing tourist destination in the UK, Bill’s will be a great success."
Record year
Liverpool ONE’s restaurants and cafés have enjoyed a record year, with catering sales up by 13% year-on-year. In the past six months, the dining venue added Ed’s Easy Diner, independent coffee house, Home, TGI Friday’s in Liverpool, and Hotel Chocolat Cocoa Café-Bar to its portfolio.
“The brand’s selection of Liverpool ONE for such a key restaurant in its UK expansion programme also exemplifies how Liverpool ONE is thriving. Bill’s joins a number of other leading dining brands in selecting Liverpool ONE for their flagship restaurant in the region,” concluded Dunnett.
Late last year, Bill’s announced that it was hoping to open 20 new sites in 2014, including Salisbury, Leamington Spa, High Street Kensington, Windsor and Hammersmith – all of which opened at the beginning of the year. This summer will see the opening of another five venues at least: Bury St Edmunds, Epsom, Manchester, Norwich, Nottingham and York.
