MeatLiquor branded venues in both London and Brighton have proved successful and the company plans to put their own stamp on Wishbone in Brixton. They will be making some changes at the restaurant starting from next week.
A Wishbone revamp
Meatailer intend to place their mark on Wishbone with a menu revamp and will be unveiling a number of new dishes at the restaurant shortly.
The restaurant’s favourite dishes, including the Thai-style thighs and Korean wings are set to stay, but alongside these will be Meatailer’s new offerings such as the MeatLiquor Buffalo Chicken burger with hot pepper sauce and a blue cheese dressing. There will also be a range of new vegetarian and chicken dishes added to the menu.
One of the owners of MeatLiquor, Yianni Papoutsis, is a champion of street food and intends for the MeatLiquor brand to add ‘spice ‘n’ all things nice’ to the Brixton restaurant.
Expansion plans
Papoutsis and co-owner of MeatLiquor Scott Collins intend to open a second Wishbone site later this year, though the location of this has not yet been confirmed. The co-founder of Wishbone, William Leigh, will continue to consult with them on the restaurant’s menu.
MeatLiquor itself is currently expanding throughout the country after the success of its London and Brighton sites. The brand is heading North and will be opening a site in Leeds in June this year, and it has also recently announced that it will be opening a site in Bristol in October. The company are set to turnover £15m this year.
The MeatLiquor brand is expanding at just the right time to take advantage of the fact that London’s continuing burger boom is spreading throughout the country, with the burger becoming a popular staple on Britain’s menus for breakfast as well as the more traditional lunch and dinner meals.

Despite being known for their burgers, the purchase of Wishbone highlights the fact that MeatLiquor is not just a burger concept, something Collins has pressed in the past. The brand has adjusted its menu by location, tapping into local markets and adding seafood to the menu in Brighton.
The brand is also one of a number of restaurants who involve themselves in charity projects. MeatLiquor raised funds for the homeless in association with StreetSmart in January this year, and also raised £21,263 last year for the international humanitarian charity, Action Against Hunger.
Wishbone is located at Unit 12 Market Row in Brixton Market and the new menu will be unveiled next week.
