Rogan reveals Claridge's restaurant details
The 90-cover restaurant will offer two multi-course menus in addition to à la carte and set lunch menus. Rogan’s senior team working on the restaurant will include executive chef Dan Cox and restaurant director Ben Hofer.
Rogan chose the name ‘Fera’, which means ‘wild’ in Italian, to reflect the influence of nature and the seasonal ingredients used in his cooking.
The menus are still yet to be drawn up, but Rogan told BigHospitality the food 'will have the L’Enclume DNA embedded in it', with produce supplied directly from his 12-acre farm in Cumbria which he built from scratch.
“It’s going to be something a few steps up; something really special,”said Rogan. “I’ve been getting the infrastructure ready for this moment for some time now and I’m really looking forward to the challenge.”

The new Claridge’s restaurant follows Gordon Ramsay's departure from the space last summer. Fera at Claridge's has been designed by British designer Guy Oliver to ‘define the modernity of today’s dining and Rogan’s own style’, whilst capturing the art deco style of the five-star London hotel.
It’s been a busy and successful past 12 months for Rogan. With L’Enclume still buzzing from receiving its second Michelin star and scoring a perfect 10 out of 10 in the Good Food Guide, the chef-turned-restaurateur opened The French and Mr Cooper’s House & Garden within the Midland Hotel in Manchester earlier in 2013.
Rogan also runs the sister restaurant Rogan & Company and local pub The Pig & Whistle - both in Cartmel - but he insists ‘Claridge’s will be a cut above the rest’.
