Bravas will open on the former Riverside Cafe site at the docks close to a number of other waterfront restaurants, including Cote, Strada and Ping Pong.
It will serve tapas dishes from an open kitchen that have been influenced by modern regional Spanish food, such as Jerusalem artichoke canelone with Medjool dates, grapefruit and beurre noisette and Mediterranean sea bass fillet with Donostiarra sauce and a selection of ceviches alongside the more traditional patatas bravas, croquetas and chipirones.
Individual dishes will be priced between £3 and £7.50 with diners expected to spend an average of £15 per head for lunch and £28 for dinner with a glass of wine per head.
Spanish restaurants
Thind, the original investor in Hakkasan, Yauatcha and Busaba and operator of the Bravas site as Riverside Cafe, decided to team up with American-born Garvey to launch his latest venue, which aims to tap into the growing trend for authentic Spanish restaurants across the capital.
Garvey, who grew up in Barcelona, started out working at Mugaritz and Akelarre in Spain before opening his own restaurant Acacia in Marbella in 2010.
Thind said: "Spain has always been my go-to culinary destination, in particular southern and central Spain. Knowing that I wanted to open my own tapas restaurant in London, I began looking for an innovative chef to create contemporary Spanish tapas which fitted with my vision.
"I met Victor through a mutual friend and we hit it off straight away. Victor has worked in some of the very best restaurants in the Basque Country, as well as other cities across the globe. St Katharine Dock felt like the perfect home for Bravas Tapas, the setting of the marina really lends itself to al fresco dining, particularly in the summer months."
Garvey's menu at Bravas will be accompanied by a range of Spanish-themed cocktails, Spanish wines, sangrias and craft beers selected by George Matzaridis, formerly of Hakkasan.
