The chef, who took over ownership of the hotel restaurant from Gordon Ramsay in 2008 following five years at the helm of Petrus, will close it on Saturday 18 January after service with plans to re-open it under the name 'Marcus' on 24 March.
Wareing said the main aim of the re-brand was to help the restaurant 'move away from the formal styles of service' to offer an experience that is 'more inviting, engaging and experiential'.
"I believe there has been a gradual, but genuine evolution in what the customer is looking for in today's fine-dining offering and we are now moving away from the more formal styles of service," he said.
"Marcus will deliver a more inviting, engaging and experiential luxury dining experience, one that meets current demands and expectations. While we continue to innovate in the kitchen, our customers will receive a new, truly superlative dining experience.
"After 10 years here I am delighted to continue my relationship with the Berkeley and Maybourne Hotel Group and over the next 10 years I want to do it better than I ever have before."
'Stunning renovation'
Wareing and the Berkeley's owner The Maybourne Group are working with Robert Angell Design Studio to execute what it calls a 'stunning renovation' of the existing restaurant. Robert Angell said he was aiming for a 'comfortable and warm' restaurant that would bring 'timeless elegance' to the space and help it become a 'cool, relaxed yet sophisticated restaurant'.
The move will also see the return of Daniel Greenock as restaurant manager following a year at Eleven Madison Park in New York. Mark Froydenlund, will continue to lead the kitchen.
Maybourne Hotel Group chief executive Stephen Alden said: “At Maybourne the quality of dining at our hotels, and creating places where people want to be, is an essential part of our philosophy.
"We fully support Marcus’s plans for his restaurant and believe he will lead the way in the new age of dining experiences. It has been an exciting year for the Berkeley with the arrival of the Bamford Haybarn at the spa, the creation of the Opus super suite on the 4th floor, and with the launch of ‘Marcus’ the hotel is placed in a strong position to take on the challenges of 2014 and beyond.”
Wareing, who also runs the Gilbert Scott at the Renaissance Hotel in St Pancras, opened Marcus Wareing at The Berkeley in September 2008 after parting company with Gordon Ramsay Holdings that summer. The chef had run Petrus at the Berkeley for Ramsay since 2003, earning a second Michelin star for the venue in 2007.
