Beattie told BigHospitality's sister publication M&C Report that the privately-funded venture plans to take a 'regional cluster' approach to its roll out plan, with openings targeted in Leeds, Liverpool and Manchester.
The first site under the rotisserie chicken brand will open in Sheffield Parkway in March 2014 and will feature a take-away service and a drive-in service called 'Cluck and Collect'.
Plans for the 90-cover site, which sits next to a Travelodge hotel, were recently approved by Sheffield City Council.
Beattie, who oversaw 150 restaurant and bars across 500 Travelodge sites, said: “We see Cluck as a convenient dining solution to the people of Sheffield and its visitors. We will be open for breakfast through to dinner and will be cooking stunning fresh produce to order. We will be offering a complete range for those dining out and to those that like to dine at home without the hassle of supermarket queue."
