Almost a year into their collaboration at the restaurant at the Lime Wood hotel in Dorset, the pair spoke frankly about how to make the partnership work and what they have learnt from working together in this way.
Hartnett, who spends about a week per month at the hotel restaurant, said Holder runs the kitchen on a daily basis, but she is involved in all menu planning and menu tastings and believes that by working in this way the restaurant can run successfully.
"I've no doubts in Luke's cooking abilities. He's a fantastic chef, he's got a fantastic palate, it's just that sometimes having a different pair of eyes can help the balance," she said. "What we do is really working together."
"Luke can off-load a lot of stuff to me, because you sometimes forget the pressures involved in running a hotel restaurant - there's breakfast, lunch, afternoon tea and dinner to think about - so it's about being there to give him support."
