Hi-Spirits is importing limited supplies of the unaged and unbarrelled Buffalo Trace White Dog Mash #1, distilled in autumn 2012, as the appeal of clear spirits for bartenders continues to increase.
Buffalo Trace Mash #1 is the recipe used to make acclaimed Bourbons including Buffalo Trace, Benchmark, Eagle Rare and George T. Stagg. These Bourbons develop their complex flavour characteristics in the oak barrel, as a result of years of interaction between the spirits and the wood.
USP:
The unaged spirit – traditionally nicknamed ‘white dog’ or ‘moonshine’ – has more of the fresh, sweet flavours of the grain used to make the spirit. Bottled at 62.5% ABV, White Dog can be used by bartenders to add extra flavour to cocktail recipes, while its ‘cleaner’ character makes it ideal for infusing with flavours such as fruit and herbs.

White Dog Walnut Sour (Created by Loki from Mint Leaf Lounge)
45ml Buffalo Trace White Dog infused with caramelised walnuts
25ml Ruby red grapefruit juice
10ml fig liqueur
10ml gomme syrup
Dash of cinnamon bitters
Dash of orange bitter
1 egg white
- Combine the liquid and the egg white.
- Dry shake, then shake with ice
- Fine strain into a stemmed glass
- Garnish with walnut and a slice of fig
