The Huxley bar & restaurant opens in Edinburgh’s Rutland Hotel
With views of Edinburgh Castle, The Huxley bar and restaurant offers a wide range of beers, wines and cocktails along with simple food menu of gourmet hot-dogs and chuck steak burgers within a 'home-from-home' setting.
“Having visited a variety of venues both in the UK and abroad, we felt that The Huxley would make an excellent addition to Edinburgh’s eating and drinking community,” said the venue’s general manager Murray Ward.
“We are hugely passionate in everything we do including our food, drink & service, and really hope that we can help reignite a bit of West End spirit with The Huxley.”
Hot dogs & steak
The hotel, situated at 1 Rutland Street, is also home to Kyloe Restaurant & Grill – both of which are operated by Signature Pub Group. The Huxley’s menu has been created by executive chef David Haetzman, who also oversees the Kyloe’s kitchen.
Head chef David Haetzman, who also heads up the Signature Pub Group’s Kyloe Restaurant & Grill, added: “We have brought together a range of well-prepared dishes that are a little different from the norm, all made using high-quality, locally sourced ingredients where possible.
“Inspired by our forays into the US, our menu boasts a range of gourmet hot-dogs and chuck steak burgers, which is what we believe people will enjoy in Edinburgh.
“It’s good, honest food that we hope will keep our guests coming back for more.”
'Home-from-home'
For its drinks menu, the team selected St Mungo lager from Glasgow, with the bar offering a selection of beers, wines and cocktails.
The Huxley also offers food inspired by American and British classics; a selection of small sharing plates including scotch egg made with venison and black pudding and a sausage roll made with spicy lamb accompanied with BBQ beans.
The interior of the new venue features vintage upholstered chairs and leather evoking a laid-back and ‘home-from-home’ feel.
Signature Pub Group was founded in 2003 by brothers Nic and Garreth Wood. The business employs almost 200 staff with it’s portfolio including Paramount and The Illicit Still in Aberdeen; and Element, The Queens Arms, The Black Bull, The Rutland Hotel, Kyloe and The Huxley in Edinburgh.
The business's strategy for the next five years is to maintain standards in the existing venues and to continue looking for further suitable opportunities in prime locations. The group’s most recent additions - Golf Tavern (which opened last year) and The Huxley are two such examples.
