Pizza Pilgrims, better known as James and Thom Elliot and who work from Berwick Street Market, were brought in by Young's and Geronimo Inns to help create the pub's new menu, which, perhaps unsurprisingly, focuses on pizza and pasta.
A five-option stone-baked flatbread pizza menu, which includes the Pizza Pata - a Margherita pizza topped with chips, runs alongside a selection of small plates such as a pint of prawns and deep fried whitebait and more substantial dishes such as grilled rib eye steak with chips, a burger and a daily pasta dish.
All round pub
The pub's general manager Simon Pac-Pomarnacki said: "Our aim is be an all-round excellent local offering freshly prepared food, including home made pasta and bread baked daily by Emmanuel, our Italian chef, as well as made to order pizzas cooked using our pizza oven. We have carefully chosen our drinks range - working with our suppliers, we are able to offer limited edition draught ales, whilst also keeping traditional ales available."
The 100-cover pub was also given a new look by Geronimo Inns' Jo Clevelly who put pastel coloured paint on the walls, installed simple lighting and bought in locally-sourced furniture.
“The Princess of Wales has transformed into a more open, brighter, and refreshed local pub, with new staff, kitchen and layout, including a fabulous outdoor space next to the canal. Clapton had been crying out for a traditional pub and The Princess of Wales delivered," said Pac-Pomarnacki.
Pizza Pilgrims follow a number of street food vendors into the restaurant and pub sector. Restaurant Meat Liquor started life as a van selling burgers and operated from a room in a pub before moving into restaurants while Russell Norman uses Big Apple Hot Dogs regulars at street food market Eat Street, at his restaurant Mishkins.
